1 onion, chopped
1 clove garlic, minced
1 green pepper, diced
1 Tablespoon salad oil
1 15oz can tomatoes, such as S&W Recipe Ready
1 15oz can kidney beans
1 15oz can pinto beans
1 15oz can black beans
1 15oz can whole kernel corn, drained
1 4oz can diced green chiles or 2 whole green chiles, diced
(1 diced jalepeno, if you like more heat)
1/2 of a 15oz can refried beans
1 1/2 teaspoons oregano
1 bay leaf
Saute onion, green pepper, and garlic until softened. If using raw chiles, saute them as well. Then proceed to ‘dump’ in all the cans and simmer until flavors blend. Pour off some or all of the bean liquid for a thicker stew, or add more refried beans.
Double recipe for a family of 4 kids.
